Chicken Pot Pie

Oh hello there FALL! You swept in so suddenly and from summer beaching to pumpkins everywhere, I don’t know where the time went! But I do know that it sure feels like October here in the city and there’s no better way to usher in the season than with delicious fall dishes. Soups, squashes, pies and pumpkins, fall is my favorite cooking season so as you can imagine, I was so excited to find an easy and yummy Chicken Pot Pie recipe! The only change we made {to make the dish even more fall festive} is to add sweet potatoes instead of regular ones. I would highly recommend!

Chicken Pot Pie

Chicken Pot Pie

3 tablespoon unsalted butter
5 large sage leaves
1 large shallot, chopped
3/4 cup diced carrots
3/4 cup diced red bell pepper
1 1/2 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
2 tablespoons flour
1 cup milk
3/4 cup heavy cream
1/3 cup Marsala wine (or dry white wine) – we tried Marsala
1 1/2 lb shredded rotisserie chicken
1 1/2 cups diced and cooked sweet potatoes
1/4 cup finely grated parmesan cheese
1 sheet puff pastry, thawed according to package
1 egg plus 1 tablespoon milk, mixed together for egg wash

1. In a large skillet, melt butter until it bubbles and foam. Add in sage and cook until butter starts to brown. Remove sage leaves and discard. Stir in shallots, carrots, red bell peppers, salt and pepper and cook until vegetables are softened. Add in flour and stir to combine. Stir in milk, cream and wine and cook until mixture starts to bubble, whisk for two -three minutes or until sauce starts to thicken. Add in chicken, potatoes and parmesan cheese and stir to combine. Remove pan from heat.

2. Transfer chicken mixture to oven proof bowls. Cut puff pastry into six pieces. Place pastry over the tops of bowls and brush with egg wash then cut slits in the pastry to allow steam to escape. Bake at 400 degrees F for 15 minutes or until pastry top is golden brown.

NYC’s Best Football Bars

Do you know what tomorrow is? Well chances are if you’re a football fan or know anyone who is, you’d know that it’s the season opener. Thursday night football in America is back! And for New Yorkers so is trying to find a bar that isn’t completely unbearable to go to for some food, drink, and game watching. So we put together a list of 5 that all have decent food, play the sound of the game, are not always packed (not always being the key words there, let’s be honest, every bar in NYC is decently packed) and some take table reservations!

Happy watching!

Must Have Fall Booties

For the past few seasons booties in all forms have been an absolute necessity and from the looks of it, I’m predicting this season will be no different! With plenty of colors, styles and fabrics to chose from, the fashion world has made it pretty clear that, if anything, the bootie is only getting bigger. I swear these guys fly off the shelves practically as soon as they’re put on them so start your fall shopping early this time around! A few of my fav styles….
